You will need

Wet ingredients:

  • 1/2 cup whole fat greek yogurt (or sub a plant-based yogurt)
  • 2 eggs
  • 1/3 cup honey
  • zest from 2 lemons
  • 1/2 tsp almond extract

Dry ingredients:

  • 1 cup Eat Up! Oat Flour
  • 1 cup almond flour
  • 1 tbsp poppy seeds
  • 3/4 tsp baking soda
  • 1/4 tsp salt

Ingredients for Glaze:

  • 1/2 cup powdered sugar
    1-2 tbsp fresh lemon juice

Directions

Preheat oven to 350 degrees. Line an 8×4 loaf pan with parchment paper and spray with non-stick cooking spray to prevent bread from sticking. In a large bowl, whisk together wet ingredients — yogurt, eggs, honey, lemon zest, and almond extract. Add dry ingredients to bowl — Eat Up! Oat Flour, almond flour, poppy seeds, baking soda, and salt. Mix with wooden spoon until well combined and pour into prepared loaf pan. Bake for 35-45 minutes. Allow bread to cool in the pan for 5 minutes and then transfer to a wire rack. Make sure the bread is completely cool before adding glaze.
